Apricots are one of the most well-known stone fruits in the world. Their bright yellow and orange colour causes many to confuse apricots with peaches. Apricot plantations thrive in cold, dry areas, such as Turkey and Uzbekistan.
The process of producing top quality dried apricots is certainly not an easy one. Traditionally, apricots are dried using sulfur dioxide. However, over the years, some companies have started to invest in more technologically advanced production processes due to health concerns surrounding the usage of sulfur dioxide in treatment processes. Organic dried apricots are dried through this process. Apricots that are dried sulfur dioxide free tend to have a darker and rougher appearance to them.
